¼ cup plain flour
¼ cup self raising flour
¼ cup corn flour
½ cup caster sugar
3 room temperature eggs
Dash of vanilla essence

1 cup icing sugar mix
2 tbs cocoa
3 ½ tbs milk

Desiccated coconut

    Doesn’t say how much milk in the icing which must be runny to dip cake in or what temp the oven should be at if using the oven. Most normal people would bake a cake in the oven. Video seems a bit lame (lamington?)

    It's was orginally made in New Zealand, and again Aussies are passing this off as their's. How creative is that!

    Yes, and there is substantial proof it was made in NZ in 1800's.

    I'm going crazy trying to make these beloved lil cakes: ((
    someone puts butter in it, someone doesn't; 2 eggs, 4, 5; baking powder/no baking powder; and the Australia mesurements conversion; and now I'm reading that corn flour in AU is wheat starch in USA. What will it be in Italy?
    Tomorrow I'll try your recipe.

    I need my Lamingtons and I want them ORIGINAL AUSSIE.

    Thanks AussieGriller! I love this australian dessert, definitely a must eat cake! What type of cocoa do you use, which bitterness (40%/60%?) Haven't had Lamingtons for 5 years, can't wait to give it a go with a true recipe (coming from an aussie citizen.) Merci ;).

    Where is the jam in the middle? If i stop at a shop the sell them without jam I just say why not.
