Kids love these fritters. Pumpkin fritters were made by our grandmothers as a snack; I usually was served two or three with a glass of milk. These fritters are crispy in the outside and soft as a pillow in the inside.

1 pound of pumpkin after is peeled and seeded
2 cups or 318g all-purpose flour
1 teaspoon or 5mL Vanilla extract
2 tablespoons or 42g of salt to boil the pumpkin
1 cup or 209g Sugar
1 cup or 237mL vegetable oil

Boil the pumpkin until very tender (usually 20 minutes).
Mash the pumpkin and add all other ingredients: sugar, flour, and vanilla extract.
Use two tablespoons to pour little amounts in the fryer.
Fry them in vegetable oil in high temperature until crispy in the outside.
Place them on a paper towel to absorb dripping oil.

Enjoy it as a snack or accompanying dinner.
